Engine out before body off ...or not??

Been soaking up the knowledge from this forum. Awesome amount of very helpful info to gather before I tear into my project. But ..one big question: should I remove the engine BEFORE taking the body off the pan ..or afterwards? And ...why? And, of course, the reverse question as well: when I'm ready to put things back together, should I install the engine BEFORE putting the body back on, or after? Seems that most of the complete teardown restorations documented here have the engine out before the body comes off .....???

The factory dropped the body over the complete chassis with engine.
